The roasting process is the most delicate phase of a roasting plant as it allows to transform an inedible green coffee seed into something extremely pleasant that we all know for its characteristic aroma and flavor. It is important to generate correct temperatures and know how to control them at the right time in order to best enhance all the flavors and aromas that a coffee blend can grant.
Through different roasting profiles, customized according to the various types of coffee and the tastes to be obtained, the initially green coffee beans undergo chemical-physical alterations that gradually change their color from yellow to monk brown with a typical cassock colour.
